Abstract

En el campo de las alergias alimentarias, el grupo BIOPEP estudia las propiedades moleculares de las proteínas alergénicas y su mecanismo de acción, siguiendo tres líneas de trabajo: Se colabora con distintos hospitales para la realización de estudios sobre los cambios inmunológicos que subyacen a la desensibilización o desarrollo de tolerancia inducidos mediante inmunoterapia oral, con el objetivo de detectar marcadores biológicos que permitan monitorizar la evolución de los pacientes. Se investiga en el uso de hidrolizados de proteínas y péptidos con actividad inmunomoduladora para su empleo como alternativa a las proteínas intactas en los tratamientos de inmunoterapia. Se evalúa la capacidad de sensibilizar y desencadenar respuestas inmunes de proteínas alergénicas de origen animal (huevo y leche), así como el efecto adyuvante de los componentes de la matriz alimentaria y del procesado. Realizamos ensayos in vitro, ex vivo e in vivo, empleando técnicas inmunológicas, moleculares, cultivos celulares y animales de experimentación.
