Abstract

El aroma constituye uno de los factores más importantes que influyen en la calidad del vino. La mayor parte de los esfuerzos encaminados a explicar el aroma de los vinos se han centrado en la caracterización de los compuestos volátiles responsables de su olor (aroma ortonasal). No obstante, la percepción del aroma de los alimentos y por tanto, las preferencias alimentarias, dependen en gran medida de los compuestos que se liberan en la cavidad oral durante el consumo y que debido a los flujos respiratorios son transportados a los órganos olfativos. Este segundo tipo de aroma, llamado retronasal, en el caso del vino, podría estar influido tanto por variables de tipo orofisiológico (flujos respiratorios, saliva, microbiota oral), como por la interacción de los compuestos del aroma con la matriz vínica (etanol, polifenoles, proteínas). El objetivo de este trabajo ha sido evaluar el efecto de la composición de la matriz vínica en el aroma retronasal liberado por distintos individuos durante el consumo de 5 tipos de vino (blanco, cava, dulce, tinto joven y crianza) empleando un sistema modelo de atrapamiento de aroma puesto a punto para tal fin. Los resultados han mostrado diferencias significativas en el aroma retronasal liberado en función de la composición del vino estudiado además de una gran variabilidad interindividual.
