Se ha estudiado la actividad inhibitoria de la ECA (IECA) y la capacidad de absorción de radicales de oxígeno (ORAC-FL) de los péptidos aislados en un vino modelo durante la autolisis acelerada. Se ha empleado una cepa de S. cerevisiae y se ha realizado la toma de muestras a las 6, 24, 48, 121 y 144 horas de autolisis. La concentración de péptidos aumenta durante la autolisis, mientras que las bioactividades aumentan durante las primeras 121h, disminuyendo posteriormente.
