Abstract

Las micotoxinas son metabolitos tóxicos produciods por hongos filamentosos. En vinos se encuentra la ocratoxina A, que está producida por hongos pertenecientes a las especies Aspergillus y Penicillium. se han realizado diversos estudios para reducir la presencia de OTA en mostos y vinos; los procedimientos propuestos se basan en la eliminación física, química o bilógica de la OTA. Este estudio pretende determinar la interacción in vitro entre OTA y bacterias lácticas del vino.
