En la actualidad, las recomendaciones dietéticas reconocen que la leche y los productos lácteos son una excelente fuente de nutrientes esenciales (ej: calcio, potasio, magnesio, zinc, riboflavina, vitamina A, folato, vitamina D y proteínas de elevada calidad nutricional), así como un vehículo ideal de componentes bioactivos que pueden aportar beneficios para la salud humana.
