Congelación electromagnética: estado actual

Abstract

Una de las técnicas más extendidas para aumentar la vida útil de los alimentos es la congelación. Esta consiste básicamente en la disminución de la temperatura del producto por debajo de su punto de congelación, lo que provoca la cristalización del agua contenidad en los alimentos.

Este trabajo ha sido financiado por el MINECO español, mediante el proyecto AGL2012-39756-C02-01. Este Organismo, a través del CSIC, financia también el Contrato Predoctoral de A.C. Rodríguez.

Presentado al VII Congreso Ibérico y V Congreso Iberoamericano de Ciencias y Técnicas del Frío (CYTEF) celebrados del 18 al 20 de Junio de 2014 en Tarragona (España).
