Modern research in food science and nutrition is moving from classical methodologies to advanced analytical strategies in which omics tools play a crucial role. Foodomics has been recently defined as a new discipline that studies food and nutrition domains through the application of advanced omics technologies in order to improve consumer's well-being, health, and confidence. This chapter presents the fundamentals of foodomics, discusses the advantages and drawbacks of this new discipline, and provides some ideas about its foreseen development, applications, and challenges.
