Abstract

Los fitoestrógenos son sustancias no nutritivas de las plantas con propiedades químicas y estructura comparable a la de las hormonas estrogénicas. Las isoflavonas de la soja son los fitoestrógenos más comunes en la dieta de las comunidades asiáticas. Su consumo se ha asociado de manera tradicional con diversos efectos beneficiosos para la salud, incluyendo una mejor salud intestinal y una tasa menor de enfermedades relacionadas con los estrógenos. Las poblaciones microbianas intestinales tienen un papel bien reconocido para preservar y mantener el estado de salud mediante varios mecanismos de antagonismo microbiano. Además, las actividades enzimáticas de los microorganismos intestinales participan en la activación de las isoflavonas, que de manera natural se encuentran en forma de glicósidos poco absosrbibles y con bajo nivel estrogénico. En este trabajo se estudia la capacidad de activación de las isoflavonas por diversas cepas de lactobacilos y bifidobacterias aisladas del intestino humano con el objetivo de identificar aquellas que presenten actividades enzimáticas apropiadas. Estas cepas podrían ser utilizadas en el diseño de leches de soja funcionales.
