Proteómica y autentificación de productos pesqueros

Abstract

El desarrollo de las tecnologías de conservación y elaboración de alimentos y la liberalización del comercio han contribuido en gran medida a la globalización del mercado de la pesca. Como los precios difieren según las especies, productos y preferencias, es importante que las entidades protejan a los consumidores de posibles casos de sustitución de especies. La Unión Europea y los Estados miembros han impuesto nuevas legislaciones en este sentido (Reglamento CE 178/2002). Sin embargo, la existencia de toda una serie de normativas carecería de sentido si no se contara con herramientas fiables que permitieran una inequívoca identificación del origen del producto. Hasta la fecha se ha demostrado el gran potencial discriminatorio de los marcadores genéticos en la identificación de las principales especies pesqueras. Por el contrario, pocos trabajos han sido enfocados en la utilización de marcadores proteicos con el mismo propósito. Durante años, las técnicas genéticas han copado esta problemática gracias a su gran sensibilidad y a la naturaleza termoestable del DNA. En esta línea, la Proteómica puede ofrecer nuevas metodologías capaces de reconocer y caracterizar de forma sensible y rápida marcadores proteicos para una amplia infinidad de productos alimenticios.
