Abstract

El trabajo llevado a cabo incluye la validación de técnicas analíticas para el estudio de la grasa de leche, concretamente el análisis de las fracciones de triglicéridos y esteroles así como su aplicación a la leche de cabra. Se han desarrollado procedimientos rápidos para el análisis cuantitativo del colesterol libre o total de la grasa de leche, mediante inyección de una disolución de la grasa directa, o previa metanolisis, o de la fracción insaponificable, por cromatografía de gases, utilizando 5alfa-colestano como patrón interno. Utilizando uno de los métodos propuestos se han cuantificado además del colesterol, tres esteroles minoritarios de la grasa de la leche de cabra. Se ha propuesto un procedimiento para el análisis cuantitativo de la fracción de triglicéridos de la grasa de leche, según número de átomos de carbono, por cromatografía de gases mediante la utilización de columnas capilares cortas. Con ese método se ha determinado el perfil cromatográfico de los triglicéridos de la grasa de leche de cabra y mediante la aplicación de una serie de regresiones lineales múltiples se ha establecido una ecuación de interés para la detección de adulteraciones con grasas extrañas. Por otra parte, mediante cromatografía en capa fina impregnada con nitrato de plata se han obtenido cuatro fracciones de los triglicéridos de la grasa de leche de cabra por orden de insaturación. En el estudio posterior por cromatografía de gases, con columnas capilares largas, se han identificado especies moleculares entre las que destacan en términos cuantitativos las que contienen los ácidos butírico, caprílico y cáprico.
