Abstract

This paper explains the situation with regard to food waste, the ways in which it affects us and specifically covers the case of the hotel and catering industry. In the same way, it shows what the proposed legislative responses have been, it will delve into some ideas, ways and plans of action for the company to mitigate this problem and turn it into an advantage, specifically through new forms of business or strategies aimed at marketing. A study of the hotel and catering sector, particularly in the province of Burgos, will be carried out by means of interviews with entrepreneurs or staff from different premises, with the aim of being able to determine the magnitude of the problem (type and quantity of food waste), and what their level of awareness of the issue is, as well as how they act in the face of it.
