Abstract

L’estudi consisteix és realitzar diferents d’alternatives de la planta existent, amb l’objectiu de poder orientar el Client a la millor solució possible, tenint el compte sempre la viabilitat física i econòmica . Un segon objectiu seria el poder deixar preparades les instal·lacions, per a futures ampliacions productives tenint en compte les limitacions físiques actuals. Centrem l’estudi en el procés de l’elaboració del formatge fresc premsat fins a la seva maduració en càmeres, sense tenir en compte el procés previ de tractament de la llet a la seva recepció

The study consists of making different alternatives to the existing plant, with the aim to be able to orient the Client to the best possible solution, always taking into account the viability physical and economic. A second goal would be to be able to leave the facilities ready for the future productive extensions taking into account current physical limitations. We focus the study on the process of making freshly pressed cheese maturation in chambers, without taking into account the previous process of milk treatment in the your reception
