Qualidade da carcaça e da carne de cabritos Serranos

Abstract

Este trabalho teve como objectivos avaliar os efeitos do género e do peso da carcaça na qualidade da carcaça e carne de cabritos de raça Serrana. Para tal, foram utilizados 60 cabritos (30 machos e30 fêmeas) de raça Serrana - Variedade Transmontana, abatidos diferente peso vivo de forma a' obter carcaças com peso dentro dos limites estabelecidos pela Denominação de Origem Protegida (4 a 8 kg).
