Evaluación microbiológica de embutidos de ovino y caprino

Abstract

Los embutidos son, por sus características nutricionales y organolépticas, productos alimenticios de alta calidad que interesa preservar. Para aumentar el rendimiento de las explotaciones agrícolas,industrias de productos cárnicos y principalmente para reutilizar carnes procedentes de animales que no se encuadran en marcas de calidad, son desarrollados nuevos productos, como embutidos de carne de ovino y caprino, utilizando materias-primas de segunda categoría. Su calidad puede estar entredicho cuando se desarrollan microorganismos que comprometen el sabor, olor, consistencia y aspecto. De hecho, la microbiota de estos productos puede influenciar sus características tanto positiva como negativamente. Para garantizar su inocuidad, se hace imprescindible el control de calidad. En este trabajo se evaluó la seguridad microbiológica de salchichas frescas producidas a partir de carne de ovino y caprino. En general, se verificó que los productos analizados presentaron una calidad microbiológica satisfactoria para todos los parámetros estudiados. Los parámetros analizados (aerobios mesófilos, psicrófilos, hongos, Staphylococcus aureus, esporas de Clostridium sulfito-reductores, Salmonella spp y Listeria monocitogenes) no difirieron significativamente en las salchichas obtenidas a partir de la carne de ovino y caprino. Sin embargo, la microbiota analizada en los embutidos de ovino y de caprino fue superior cuando se adicionó el pimentón como condimento.
