Low energy intake and small amount of saturated fatty acids, high intake of poly-unsaturated fatty acids, fiber and vitamins are main advantages of vegan diet. Low intake of calcium led to low density of bone matrix, however without clinical significance. The B12 status should be maintain by supplementation. The pros of vegan diet is low incidence of heart and coronary disease and 2 type diabetes. From the hygienic point of view, temperature treatment of vegan meal is recommended. There is a risk of higher intakes of pesticides and nitrates among vegan population.
Veganská strava má nízký obsah energie, nasycených mastných kyselin, ale je bohatá na polynenasycené mastné kyseliny, vlákninu a vitamíny. U veganů byl zaznamenán nízký příjem vápníku a vitamínu B12. Nízká hustota kostní hmoty u veganů však není klinicky významná. Vitamín B12 je nutné doplňovat pomocí farmakologických preparátů. Pro konzumaci veganské stravy svědčí snížené riziko vzniku srdečně cévních onemocnění a diabetu 2. typu. Při úpravě veganské stravy je z hygienického hlediska potřeba tepelné úpravy. Byla dokázána zvýšená expozice pesticidům a dusičnanům.
