Inspeção sanitária de Ungulados: bem-estar animal de bovinos em matadouro

Abstract

O presente relatório descreve as atividades desenvolvidas no estágio curricular do Mestrado Integrado em Medicina Veterinária da Universidade de Évora, realizado no Serviço de Desenvolvimento Agrário Açores da Terceira (SDAT) Açores – no âmbito da inspeção sanitária em estabelecimentos de abate e sala de desmancha. As atividades de inspeção foram desenvolvidas no Matadouro da Ilha Terceira (MIT), o único matadouro da ilha a abater ungulados. Deu-se maior importância às tarefas efetuadas pelo médico veterinário oficial no estabelecimento de abate. Durante o estágio no matadouro foram abatidos 17590 animais com valores de rejeições totais em regime de abate regular de 1,11% em bovinos, 0,44% em suínos e de 1,33% em pequenos ruminantes e em regime de abate de emergência a percentagem de rejeições totais foi de 36,67% em bovinos e de 20% em suínos. Avaliaram-se as condições de Bem Estar-Animal (BEA) no Matadouro da Ilha Terceira (MIT) de acordo com os conselhos científicos do Painel da Saúde e do Bem-Estar dos Animais da Autoridade Europeia para a Segurança Alimentar. Os resultados avaliados demonstraram, na sua maioria, o respeito pelas condições de BEA no MIT; ABSTRACT: Meat Inspection of Ungulates: Animal Welfare of Cattle in a Slaughterhouse This report describes the activities developed during the curricular internship of the Mestrado Integrado em Medicina Veterinária da Universidade de Évora, carried out at the Azores Agricultural Development Service of Terceira (SDAT) Azores - within the framework of health inspection in slaughterhouses and cutting plants. The inspection activities were carried out at the Slaughterhouse of Terceira Island (MIT), the only slaughterhouse on the island to slaughter ungulates. It gave greater importance to the tasks carried out by the official veterinarian in the slaughterhouse. During the internship in the slaughterhouse 17590 animals were slaughtered with total rejection values in regular slaughter of 1.11% in cattle, 0.44% in pigs and 1.33% in small ruminants and in emergency slaughter the percentage of total rejections was 36.67% in cattle and 20% in pigs. The Animal Welfare (AW) conditions in the Slaughterhouse of Terceira Island (MIT) were evaluated according to the scientific advice of the Panel on Animal Health and Welfare of the European Food Safety Authority. The evaluated results demonstrated, in the majority, the preservation of the Animal Welfare at MIT.
