Abstract

Este estudo investiga a viabilidade e o impacto económico da implementação de um certificado de Qualidade e Palatibilidade da carne de bovino, no mercado de produtos agroalimentares em Portugal, com o objetivo de facilitar o reconhecimento da qualidade da carne, por consumidores sem conhecimentos técnicos prévios, de determinar se os produtos certificados poderão apresentar um preço premium em comparação aos seus equivalentes não certificados e ajustar os preços de compra ao produtor consoante a qualidade produzida. A certificação traduz autenticidade do produto ao consumidor, em casos semelhantes tem sido reconhecido pelo seu potencial de agregar valor económico. No entanto, os seus efeitos são altamente dependentes do contexto, especialmente em mercados como o de Portugal, onde o poder de compra é limitado. Este modelo inspira-se em sistemas já implementados em países desenvolvidos, como Japão, Austrália, Estados Unidos e Canadá, reconhecidos pela sua excelência na produção e certificação de carne. Foi também levado a cabo um questionário destinado ao consumidor, de forma a obter dados estatísticos que traduzam a intenção de compra, a perceção de qualidade, e o conhecimento do setor. Através de uma abordagem multidisciplinar, que incluiu revisão de literatura, análise estratégica e financeira, e recolha de dados primários, foi possível comprovar que o modelo proposto é tecnicamente sólido, economicamente atrativo e alinhado com as tendências atuais de consumo. Os consumidores demonstram valorização crescente pela qualidade sensorial da carne e disposição para pagar um prémio por produtos certificados. A confiança em entidades certificadoras independentes, associada à existência de tecnologia objetiva e padronizada, reforça a pertinência do sistema. O “MeatScore” destaca-se assim como uma oportunidade de diferenciação, permitindo uma remuneração justa ao produtor com base na qualidade efetiva e garantindo ao consumidor final maior transparência e confiança no produto que adquire.

This study investigates the feasibility and economic impact of implementing a Beef Quality and Palatability Certification system in the Portuguese agri-food market. The aim is to facilitate the recognition of meat quality by consumers without prior technical knowledge, to assess whether certified products can command a premium price compared to their non-certified counterparts, and to adjust producer purchase prices according to the quality delivered. Certification acts as a guarantee of product authenticity, and in similar contexts has shown potential to generate added economic value. However, its effectiveness is highly context-dependent, particularly in markets like Portugal where purchasing power is limited. This model draws inspiration from systems already implemented in developed countries such as Japan, Australia, the United States, and Canada, all recognized for their excellence in meat production and certification. A consumer survey was also conducted to collect statistical data on purchasing intent, quality perception, and knowledge of the sector. Through a multidisciplinary approach, including literature review, strategic and financial analysis, and primary data collection, it was possible to verify that the proposed model is technically sound, economically attractive, and aligned with current consumption trends. Portuguese consumers increasingly value the sensory quality of meat and show a clear willingness to pay a premium fee for certified products. Confidence in independent certifying bodies, combined with the availability of objective and standardized evaluation technologies, reinforces the system’s relevance. As such, the “MeatScore” project emerges as a strong opportunity for differentiation, enabling fairer compensation to producers based on actual quality and offering consumers greater transparency and trust in the products they purchase.
