Beverage tourism as heritage: Whisky and heritage tourism in Scotland

Abstract

A experiência culinária e as bebidas locais são amplamente consideradas como uma parte central de muitas experiências turísticas culturais e patrimoniais. Contudo, existem ainda poucos estudos a investigar a relação entre as bebidas típicas de uma região e o turismo patrimonial. O turismo ligado ao whisky escocês é um tema ainda pouco explorado e que esta tese pretende investigar, nomeadamente a relação entre o destino, o whisky e os atributos patrimoniais, a motivação turística e a satisfação turística. Com base numa amostra de conveniência composta por 121 turistas escoceses de whisky, o nosso estudo revelou que as características patrimoniais foram o fator mais significativo a influenciar as motivações turísticas, e que a motivação tem uma influência positiva na satisfação dos turistas. As contribuições teóricas desta tese incluem a introdução de um novo modelo conceptual, num sistema de classificação turística modificado e num perfil turístico e demográfico do turista do whisky. As implicações para a gestão incluem a recomendação de experiências imersivas e a narração de histórias como ferramentas de marketing.

Although cuisine and beverages are widely considered a central part of many cultural and heritage tourist experiences, there are very few studies investigating the relationship between beverage and heritage tourism. Scottish whisky tourism is a thoroughly under-researched topic, and this dissertation investigates the relationship between destination, whisky, and heritage attributes, tourist motivation, and tourist satisfaction. Data from a convenience sample of 121 Scottish whisky tourists revealed that heritage characteristics were the most significant factor influencing tourist motivations, and that motivation has a positive influence on tourist satisfaction. Theoretical contributions include the introduction of a new conceptual model, a modified tourist classification system, and a whisky tourist profile and demographic. Managerial implications include the recommendation for immersive experiences and storytelling in marketing.
