Covid-19 y Seguridad Alimentaria

Abstract

Los alimentos son fundamentales para la vida y subsistencia del ser humano, este hecho provoca que la seguridad de los mismos haya sido una constante preocupación por parte de la humanidad. El motivo de esta creciente preocupación del consumidor ha desembocado en la obligación de la industria alimentaria en desarrollar programas y procedimientos que aseguren aún más la inocuidad de sus productos y elaboraciones. La pandemia causada por la Covid-19 ha sido el detonante de algunos nuevos cambios en la población. El presente trabajo trata de evaluar y revisar la literatura científica de una forma simple, clara y concisa. Así como dar respuesta a diferentes interrogantes que han surgido a causa de la enfermedad causada por el SARS-COV-2, como son, entre otros, saber distinguir y diferenciar aquella información con rigor procedente de los medios de comunicación, y tener siempre presente la importancia de mantener buenas prácticas higiénicas. En relación con la posibilidad de que los alimentos sean una fuente o una ruta potencial de transmisión del virus, organismos competentes y autoridades sanitarias subrayan que no existe evidencia significativamente estadística hasta la fecha. La necesidad de mantener unida a la población mundial en estas circunstancias es crucial y la toma de decisiones ha de ser conjunta para mitigar y resolver conflictos relacionados con la salud. Los alimentos a los que tiene acceso la población han de ser seguros, accesibles e inocuos para que no provoquen enfermedades, un gran reto que seguirá estando al orden del día para evitar toxiinfecciones alimentarias debidas a errores en la manipulación, conservación y preparación, entre otros.
