Abstract

Gjennom erfaring, kunnskapsutvikling og effektiv forvaltning er viktige fiskebestander nå i godt hold og kvotene er økende. Utfordringen er å utnytte den gunstige ressurssituasjonen til å skape produkter som har høy verdi for konsumentene og god lønnsomhet for næringsaktørene. Nøkkelen ligger i å forbedre og stabilisere kvaliteten på råvarene og sikre en optimal leveringsdyktighet slik at råvarenes iboende egenskaper kan utnyttes bedre i produksjon og markedsføring. Bærekraftig forvaltning har lenge hatt høy prioritet, og i senere tid er det kommet økt fokus på hvordan ulike høstingsstrategier belaster miljøet. Selv om produksjon fra ville bestander gir lave klimagassutslipp sammenlignet med mye annen proteinproduksjon, er forbedringspotensialet stort. Miljøbelastningen er blitt en viktig dimensjon som kundene vektlegger ved kjøp av produktene, og kan således betraktes som et kvalitetskriterium. Rapporten oppsummerer et tverrfaglig arbeid hvor vi har sett på utfordringer knyttet til både kvalitet og miljø innen fiskeri.
