The unit operation of spray drying has been in use for over half a century. It is widely employed in the chemical and allied industries to dry thermo-sensitive materials because the temperature of the drying particles remains relatively low and the residence time ls short. Because of the high transfer rates which can be obtained and because a granular dry product is frequently very desirable, spray drying is being used to process an ever increasing list of materials, not all of them being thermo-sensitive.
