ANÁLISE SENSORIAL DE MANGA (MANGIFERA INDICA L)

Abstract

O objetivo deste trabalho foi comparar os atributos sensoriais de três variedades de manga (mangifera indica L.) Tommy Atkins, Haden e Espada. As amostras foram coletadas em estabelecimentos comerciais de Curitiba e submetidas aos testes de ordenação e perfil de características, quanto aos atributos cor, aparência, sabor e textura. O teste de ordenação mostrou que asamostras de manga das variedades Tommy Atkins e Haden foram as preferidas. No perfil de características, a amostra de manga da variedade Tommy Atkins apresentou os melhores resultados na avaliação da cor, aparência, sabores ácido e doce e ausência de fibras.
