KARAKTERISTIK TEPUNG PISANG AMBON (Musa Paradisiaca Var. Sapientum (L.)Kunt) DENGAN VARIASI TINGKAT KEMATANGAN DAN SUHU PENGERING MELALUI TEKNOLOGI PASCA PANEN

Abstract

Tujuan penelitian ini untuk mengetahui pengaruh variasi suhu pengeringan pisang ambon dan tingkat kematangan pisang ambon terhadap kadar air, kadar abu, uji karbohidrat dengan mengamati warna, kadar protein, cemaran logam (Pb), cemaran mikroba dan uji sensori (warna, aroma, tekstur,rasa). Pada proses pengeringannya menggunakan dehidrator dengan variasi suhu pengering 50°C, 55°C, 60°C, 65°C, 70°C, 75°C dengan tingkat kematangan pisang ambon belum matang, pisang ambon sudah matang dan pisang ambon terlalu matang. Dari hasil pengujian kadar air hasil terendah sebesar 6,89%, kadar abu terendah sebesar 0,005%, kadar protein tertinggi sebesar 6,02%, dan dari hasil pengujian cemaran logam Pb diperoleh bahwa tepung pisang ambon tidak mengandung cemaran logam Pb, uji karbohidrat dilakukan secara kualitatif dengan hasil positif mengandung karbohidrat yang ditandai dengan endapan merah bata, cemaran mikroba rata – rata sebesar 5,3x 105 koloni/g - 9,1x 105 koloni/g. Hasil uji sensori dari 25 panelis dihasilkan bahwa panelis memiliki ketertarikan pada sampel tepung pisang ambon lewat matang suhu 75 °C.
