Abstract

En la actualidad las personas están retomando su habito de consumo saludable, teniendo preferencia al consumo de productos frescos, sanos y seguros; tomando con relevancia el uso de recubrimientos comestibles; por ello, se planteó evaluar el efecto del recubrimiento comestible a base de - aceite esencial de residuos de naranja - (AERN) sobre las características físicas en trozos de mango (Mangifera indica L), se emplearon cascaras de naranja como materia prima del aceite esencial, el compuesto aromático fue extraído empleando pretratamiento de ultrasonido. Los recubrimientos comestibles fueron formulados con aceite esencial de cascara de naranja y quitosano; se desarrolló dos tratamientos; con la variación del porcentaje de aceite esencial (0,50 y 1,00 %) y una muestra control. Los trozos de mango fueron almacenados en refrigeración a 5°C. Se evaluaron las características físicas (°Brix, pH, % acidez titulable y % pérdida de peso) transcurrido los 8 días de almacenamiento. Los resultados mostraron que la aplicación del recubrimiento comestible ayuda a conservar las características físicas de los trozos de mango. En cuanto al tratamiento control (T0), 1 (T1) y 2 (T2) se obtuvo como °Brix final (16,7; 16,2; 16,4), pH final (3,7; 3,7; 3,7), % acidez titulable (1,8; 2,92; 2,92), pérdida de peso % (2,03; 2,57; 1,47). El tratamiento 2 (compuesta por 1%AERN) fue el más destacable respecto a la muestra control.
