Efecto del pulverizado de papa de aire sobre la calidad de pasta alimenticia libre gluten

Abstract

Esta investigación evaluó el efecto del pulverizado de papa de aire sobre la calidad de pasta alimenticia libre de gluten destinado para personas celiacas o intolerantes a esta proteína. Se aplicó metodología exploratoria, investigativa, descriptiva y explicativa donde se evaluaron propiedades fisicoquímicas, bromatológicas, sensoriales y microbiológicas del producto final. Se utilizó pulverizado de papa de aire y harina de avena al 0%P+100%HA, 10%P+90%HA, 20%P+80%HA, 30%P+70%HA, 40%P+60%HA y 50%P+50%HA. Se aplicó diseño completamente al azar (DCA), a las variables fisicoquímicas demostrando que al aumentar pulverizado de papa de aire incrementaron los valores de los parámetros, sin embargo, cumplen con la NTE INEN 1375:2014 requisitos para pastas alimenticias, además, se obtuvo pasta alta en carbohidratos, proteína y fibra. El análisis sensorial determinó que T4 (20%P+80%HA) obtuvo mayor aceptabilidad en atributos evaluados de forma, tamaño, color, olor y firmeza. Finalmente, el análisis microbiológico demuestra que todos los tratamientos se encuentran dentro de los rangos establecidos por la Norma NTE INEN 1375:2014 de requisitos microbiológicos para pastas alimenticias en el recuento de colonias en UFC/g de mohos y levaduras, salmonella y aerobios mesófilos, de tal forma que cumplen con las condiciones para ser consumidos sin que afecte la salud de las personas.
