SECADO CON TECNOLOGÍA SOLAR: UNA OPCIÓN PARA CONSERVACIÓN DE LA CARNE

Abstract

La Región Norte de Jalisco es una zona ganadera que ocupa segundo lugar a nivel nacional en esta actividad económica. Por otro lado, la comunidad en esta región aprovecha la abundancia de la carne de res en gran medida seca. Este alimento es considerado muy bajo en grasa y de alto contenido proteínico, así como con importantes minerales. Desafortunadamente, la técnica utilizada es el secado a cielo abierto, exponiendo a la contaminación por insectos y requiriendo largos tiempos para el secado. El secado solar tecnificado, permite eliminar estos problemas.
