Abstract

La bioquímica, término derivado de la palabra “química de la vida”, sirve como puente entre múltiples disciplinas científicas, como la química, la física, la biología y la microbiología. Sus contribuciones a los campos de la ciencia, la nutrición y la salud han sido transformadoras y de gran alcance. Este libro tiene como objetivo proporcionar una introducción completa y accesible a los conceptos fundamentales de la bioquímica, específicamente, adaptados a las ciencias nutricionales.
