Avaliação da qualidade do leite “in natura”: um estudo de caso

Abstract

Existe uma crescente preocupacao dos consumidores quanto a qualidade dos produtos lacteos e, sobretudo da seguranca alimentar. Assim, este estudo objetivou avaliar a qualidade do leite “in natura” fornecido a uma Usina de Laticinios utilizando o Controle Estatistico do Processo. Os dados foram obtidos das planilhas fornecidas pela Usina no periodo de setembro de 2004 a maio de 2005. Coletou-se 1696 amostras de leite entregue por 75 fornecedores das quais foram analisadas as variaveis: agua excedente em percentual, acidez em graus Dornic e teor de gordura em percentual. Para a analise dos dados foi utilizada a estatistica descritiva e o Controle Estatistico do Processo que permite monitorar um conjunto de dados por meio de graficos. Nesta analise foi utilizado o grafico p, o qual leva em conta a fracao de dados nao-conformes. Os resultados mostraram na estatistica descritiva que a media do grau de acidez e do teor de gordura estao dentro dos limites aceitaveis. Porem, a media do percentual de agua excedente e alta, ficando fora dos limites aceitaveis. No que se refere ao grafico de fracoes nao-conformes as tres variaveis apresentaram pontos fora dos limites de controle.
