Abstract

本研究では台湾産の'屏東長茄'種ナス果実を材料とし, 1℃, 10℃および16℃にて, 貯蔵中の品質変化を調べ, また, 低温障害の発生状態を観測した。ナス果実を厚さ0.03mmのポリエチレン袋で包装し, 各温度処理に有孔区, 密封区およびエチレン除去区を設けた。貯蔵期間中, 週ごとに品質の変化および低温障害の症状, すなわち, 水分含量, アントシアン含量, 可溶性固形物含量, 果肉硬度, 表皮のピッティング, 種子部の褐変などを調査した。1℃で1週間以上も貯蔵した果実は完全に軟化し褐変した。10℃で貯蔵した場合, 密封区に最初にピッティングが発生し, 次ぎにエチレン除去区に, 最後に有孔区にも発生した。20℃通気貯蔵でナス果実の呼吸量を測定した。始めは10-15mg/k9/Hrの低レベルであったが, 10日以降になるとカビが発生し, 呼吸量も40mg/kg/Hrまで上昇した。低温障害が進むにつれ, 果肉中の柔軟細胞の扁平化は多くなったが, 表皮層の細胞は変化していなかった。
