Abstract

Le dernier numéro de la revue Le Mouvement social vient de paraître. Il rassemble des contributions d'historiens et de sociologues portant sur l'histoire des industries agroalimentaires en France. Ce dossier, coordonné par Julian Mischi (INRAE, IRISSO) et moi-même, est l'aboutissement d'un travail qui a débuté en... en 2021 ! Bien qu'elle représente, depuis le 19e siècle, la première ou la deuxième branche de l'industrie française, la production des aliments constitue un angle mort des historiographies...
