Antimicrobial and Antioxidant Potential of Wild Edible Mushrooms

Abstract

Les champignons comestibles sauvages ont une propriété nutritionnelle élevée qui a été consommée par des personnes de différentes parties du monde, produisant une grande variété de composés bioactifs tels que les polysaccharides, les peptides, les glycoprotéines, les triterpénoïdes, les lipides et leurs dérivés. Dans le monde, les agents pathogènes multirésistants aux médicaments ont considérablement augmenté, et il est très urgent de rechercher des solutions alternatives pour lutter contre les agents pathogènes multirésistants aux médicaments. De plus, les aliments malsains, les rayonnements ultraviolets, ainsi que d'autres effets environnementaux, sont responsables de la génération de radicaux libres, du stress oxydatif et de nombreuses maladies de santé. Par conséquent, le champignon comestible sauvage pourrait être une source alternative de nouveau potentiel antimicrobien et possède des propriétés antioxydantes qui peuvent jouer un rôle important dans la prévention de diverses maladies de santé. Dans ce chapitre du livre, nous nous concentrons sur l'étude du potentiel antimicrobien et antioxydant des champignons comestibles sauvages et de leur production de composés bioactifs.

Los hongos silvestres comestibles tienen una alta propiedad nutricional que ha sido consumida por personas de diferentes partes del mundo, produciendo una amplia variedad de compuestos bioactivos como polisacáridos, péptidos, glicoproteínas, triterpenoides, lípidos y sus derivados. En el mundo, los patógenos multirresistentes han aumentado drásticamente y es muy urgente buscar soluciones alternativas para luchar contra los patógenos multirresistentes. Además, los alimentos poco saludables, la radiación ultravioleta y otros efectos ambientales son responsables de generar radicales libres, estrés oxidativo y numerosas enfermedades de salud. Por lo tanto, el hongo silvestre comestible podría ser una fuente alternativa de nuevo potencial antimicrobiano y posee propiedades antioxidantes que pueden desempeñar un papel importante en la prevención de diversas enfermedades de salud. En este capítulo del libro, nos centramos en investigar el potencial antimicrobiano y antioxidante de los hongos silvestres comestibles y su producción de compuestos bioactivos.

Wild edible mushrooms have a high nutritional property that has been consumed by people from different parts of the world, producing a wide variety of bioactive compounds such as polysaccharides, peptides, glycoproteins, triterpenoids, lipids, and their derivatives.In the world, multidrug-resistant pathogens have been increasing drastically, and it is very urgent to search for alternative solutions to fight against multidrug-resistant pathogens.Moreover, unhealthy foods, ultraviolet radiation, as well as other environmental effects, are responsible for generating free radicals, oxidative stress, and numerous health diseases.Hence, the wild edible mushroom could be an alternative source of new antimicrobial potential and possesses antioxidant properties that can play significant roles in preventing various health diseases.In this book chapter, we focus on investigating the antimicrobial and antioxidant potential of wild edible mushrooms and their bioactive compound production.
