EVALUACIÓN DEL IMPACTO DE LA PAPAINA EN LA CALIDAD SENSORIAL DE CARNE DE RES

Abstract

La papaya (Carica papaya) es una fruta tropical que contiene la enzima papaína, la cual ha demostrado tener propiedades ablandadoras de la carne. Este compuesto ha despertado interés por su uso como ablandador de carne en la industria alimentaria debido a su importancia nutricional para la carne de vacuno. Este artículo de revisión se centra en el uso de la papaína como ablandador de carne y estudia sus efectos sobre la calidad de la carne. Varios estudios científicos y observaciones han demostrado que la papaína ha demostrado ser eficaz para reducir el peso de la carne y aumentar la grasa de la carne y la masa muscular. Además, los estudios han demostrado que la administración tópica, ya sea como adobo o como aplicación, no es adecuada por razones sensoriales como el sabor y la textura de la apariencia física, lo que requiere la aceptación del consumidor. Por lo tanto, la papaína exhibe un alto grado de resistencia a la tracción y mejora las propiedades adhesivas de varios biomateriales. Se ha descubierto que su uso tiene un gran potencial para mejorar la calidad de la carne sin comprometer las propiedades de la misma.
