Abstract

Ipomoea aquatica Forsskal (kangkung air) dimanfaatkan oleh masyarakat sebagai bahan makanan dan obat tradisional. Dilatarbelakangi adanya faktor geografis yang dapat mempengaruhi kandungan senyawa suatu tanaman, maka penelitian ini ditujukan untuk menelaah kandungan senyawa kimia daun kangkung air yang diperoleh dari daerah Kopo, Bandung Selatan. Penelitian dimulai dengan sortasi kering dan pembuatan serbuk simplisia. Serbuk simplisia diekstraksi dengan ekstraksi sinambung menggunakan pelarut n-heksana dan metanol. Ekstrak metanol difraksinasi dengan ekstraksi cair-cair menggunakan pelarut etil asetat dan n-butanol, Fraksi etanol dan fraksi etil asetat dimurnikan dengan kromatografi kertas preparatif dan dikarakterisasi menggunakan spektrofotometer UV-sinar tampak. Dari hasil penelitian diperoleh senyawa flavonoid dari fraksi etil asetat yang memiliki gugus trihidroksi pada posisi 3, 5, 7 dan gugus orto dihidroksi pada cincin B di posisi 3',4' yang merupakan senyawa aglikon kuersetin dan senyawa flavonoid dari fraksi n-butanol yang memiliki gugus 3-O-tersubstitusi, gugus dihidroksi pada posisi 5,7 dan gugus orto dihidroksi pada cincin B di posisi 3',4' yang merupakan senyawa kuersetin 3-Omonoglikosida.Kata kunci: kangkung air, Ipomoea aquatica, flavonoidIpomoea aquatica Forsskal is used by people as food and traditional medicine. Geographic factors can influence chemical compounds of the plant. The goal of this research was to examine the chemical compounds of Ipomoea aquatica Forsskal collected from Kopo, South Bandung. Crude drug of Ipomoea aquatica Forsskal was extracted using Soxhlet apparatus with n-hexane and methanol. The extract was fractionated by liquid-liquid extraction using ethyl acetate, and butanol. The butanol fraction and ethyl acetate fraction were purified by preparative paper chromatography and characterized by UV-visible spectrophotometry. Two flavonoids were obtained, from ethyl acetate fraction it had trihydroxy on 3, 5, 7 position, and ortho dihidroxy on B ring in 3',4' position. From n-buthanol fraction it had 3-O-substituted, dihydroxy on 5,7 position and ortho dihydroxy on B ring in 3',4' position. Ipomoea aquatica Forsskal leaf cointained quercetin and quercitrin 3-O-monoglycoside.Keywords: water spinach, Ipomoea aquatica, flavonoid
