SISTEM KONTROL DAN MONITORING FERMENTASI TEMPE BERBASIS INTERNET OF THINGS (IOT) DENGAN PROTOCOL MESSAGE QUEUING TELEMETRY TRANSPORT (MQTT) DAN FUZZY LOGIC

Abstract

Perkembangan teknologi Internet of Things (IoT) memungkinkan penerapan sistem otomatis dalam proses fermentasi tempe yang sebelumnya masih dilakukan secara manual. Permasalahan yang dihadapi adalah sulitnya menjaga kestabilan suhu dan kelembaban secara konsisten, yang berpengaruh terhadap kualitas dan lama waktu fermentasi. Penelitian ini bertujuan untuk merancang dan mengimplementasikan sistem kontrol dan monitoring fermentasi tempe berbasis IoT menggunakan protokol Message Queuing Telemetry Transport (MQTT) dan metode Fuzzy Mamdani. Sistem memanfaatkan sensor suhu dan kelembaban untuk memperoleh data secara real-time yang dikirim melalui MQTT dengan mekanisme publish–subscribe. Metode Fuzzy Mamdani digunakan untuk menentukan aksi kontrol terhadap aktuator berdasarkan kondisi lingkungan. Hasil pengujian menunjukkan bahwa sistem mampu menjaga suhu pada rentang 30–35°C dan kelembaban 60–80% sesuai kondisi optimal fermentasi. Selain itu, sistem mampu mempercepat waktu fermentasi menjadi sekitar 20 jam dibandingkan metode konvensional yang membutuhkan waktu 30–36 jam atau 1 hari 1 malam. Secara keseluruhan, sistem berjalan stabil, meningkatkan efisiensi proses, serta menghasilkan fermentasi yang lebih konsisten.
