AKTIVITAS ANTIOKSIDAN DAN ANTIKOLESTEROL EKSTRAK ETANOL JAGUNG UNGU (Zea mays.L)

Abstract

Antioksidan merupakan zat yang dapat memperlambat atau mencegah terjadinya kerusakan yang disebabkan oleh proses oksidasi. Salah satu tanaman yang mengandung antioksidan adalah Jagung ungu mengandung senyawa antosianin. Antosianin dapat berfungsi sebagai antioksidan alami, selain itu, jagung ungu juga mengandung flavonoid, karotenoid dan antoxantin. Kolesterol merupakan suatu zat alami yang memiliki sifat fisik serupa dengan lemak tetapi memiliki rumus steroida. Kolesterol termasuk dalam golongan lipid yang tidak terhidrolisis dan merupakan sterol utama dalam jaringan tubuh.Senyawa flavonoid yang terdapat didalam jagung dapat digunakan untuk menurunkan kolesterol didalam tubuh. Tujuan penelitian ini untuk mengetahui aktivitas antioksidan dan aktivitas antikolesterol pada jagung ungu. Uji aktivitas antioksidan menggunakan metode DPPH dan uji aktivitas antikolesterol dilakukan secara in vitro dengan pereaksi Lieberman Burchard. Antioksidan dan antikolesterol dianalisis menggunakan spektrofotometer UV Vis. Hasil yang diperoleh menunjukkan bahwa jagung Ungu memiliki aktivitas IC50 sebesar 89,96 dan aktivitas antikolesterol pada jagung ungu memiliki aktivitas EC50 sebesar 54,87. Aktivitas antioksidan tergolong aktivitas kuat, sedangkan antikolesterol menunjukkan dapat menurunkan 50% dari kolesterol awal.
