Abstract

A biodiversidade apresenta papel importante na manutenção e construção de uma gastronomia identitária, estimulando cadeias produtivas locais que respeitam aspectos ecológicos da região. Considerando a biodiversidade autóctone do sul do Brasil, destaca-se a pitangueira (Eugenia uniflora L.), planta que produz frutos com grande versatilidade gastronômica, mas ainda subutilizada e pouco cultivada com propósito comercial nessa região. Dentro desse contexto, o presente trabalho objetivou analisar a presença, demanda e procedência da matéria-prima de produtos derivados de pitanga – polpa congelada, suco e sorvete – no comércio de Florianópolis (SC). Verificou-se ausência de comercialização da polpa industrializada nas principais redes de supermercados locais durante o período de avaliação, bem como a reduzida demanda do suco em casas especializadas do Centro de Florianópolis. Cerca de 28% das sorveterias avaliadas afirmaram comercializar sorvete da fruta, com demanda comprovada. Objetivando avaliar os motivos da rejeição do suco e a ausência da polpa nos mercados, realizou-se complementarmente teste de aceitabilidade do suco de pitanga elaborado a partir de sua polpa industrializada, comparando-o com o suco elaborado a partir da polpa extraída artesanalmente da fruta, bem como com o suco de polpa de acerola (padrão comparativo). Os resultados evidenciam que a baixa demanda pelo suco de pitanga pode estar relacionada a características organolépticas da polpa industrializada empregada.
