FRUTOSE A PARTIR DE SACAROSE E GLICOSE: UMA REVISÃO BIBLIOGRÁFICA

Abstract

Objetiva a revisão bibliográfica dos estudos sobre separação entre frutose e glicose. Em primeiro lugar, reune as vantagens industriais, médicas e alimentícias do uso de frutose como adoçante. A seguir estuda: a) o uso de resinas trocadoras de íons na indústria de carboidratos; b) suas características de acordo com a granulometria e grau de interligação; c) seu uso em processos de catálise heterogênea, exclusão iônica, gel filtração e separação de açúcares por sorção entre outros. Analisa os métodos de obtenção, vantagens e aplicações dos xaropes com alto teor de frutose. Dentre os métodos industriais, relata de maneira sucinta a evolução histórica da isomerização da glicose, da fermentação seletiva da glicose e dos processos de sorção: a partição cromatográfica e a adsorção seletiva. Como conclusão, apresenta o uso da adsorção seletiva, em resinas catiônicas da forma cálcio, como sendo o melhor método para se obter soluções de alta pureza em glicose e frutose.
