MACARRÕES FORMULADOS COM FARINHA DE MILHO PRÉ-GELATINIZADA, FÉCULA DE BATATA E FARINHA DE SOJA

Abstract

Foram elaboradas formulações de macarrão tipo espaguete com substituição de parte da farinha de trigo por farinha de milho pré-gelatinizada, fécula de batata e farinha de soja em proporções de 10%, 20%, 30%, 40% e 50%. Para avaliação dos diferentes produtos foram feitas com parações com a formulação padrão, através dos seguintes testes: umidade, tempo de cozimento, teor de sólidos na água de cozimento, mastigabilidade (textura), sabor, pegajosidade (colamento), aparência e cor. Os macarrões formulados com farinha de milho pré-gelatinizada e fécula de batata apresentaram boa aceitabilidade em relação à cor, aparência e demais características avaliadas. Os macarrões com farinha de soja foram os que apresentaram as maiores dificuldades no processamento e menor aceitabilidade em relação a aparência e sabor.
