Abstract

Foram utilizadas cascas e sementes de maracujá amarelo (Passiflora edulis f. flavicarpa Deg.). Realizou-se determinações físico-químicas e químicas em cascas e sementes. As cascas apresentaram altos teores de umidade; baixo conteúdo em proteínas e lipídios totais; elevado percentual de fibra; boa quantidade de NIFEXT e ferro; razoável conteúdo de cálcio e baixo teor de fósforo. Observou-se nas sementes elevado percentual de fibra; boa quantidade de lipídios totais, cálcio e fósforo. Palavras-chave: Maracujá; cascas e sementes -Características físico-químicas e químicas.
