OBTENÇÃO E CARACTERIZAÇÃO DE MARGARINA CONVENCIONAL E LIGHT À BASE DE ÓLEO DE PEQUI

Abstract

Este estudo teve por objetivo desenvolver margarinas convencional e light à base de óleo de pequi e avaliar suas características físico-químicas, microbiológicas e sensoriais. O óleo utilizado (adquirido de associação de pequenos produtores) foi submetido a determinações físico-químicas e microbiológicas antes do processamento e mostrou valores satisfatórios para o processamento subsequente. As margarinas elaboradas foram submetidas à análises físico-químicas, microbiológicas e sensoriais, verificando-se a intenção de compra dos produtos. As margarinas apresentaram teor de lipídios totais de 79,48% (Convencional) e 61,25% (Light), com redução média do valor calórico de 23%. A margarina convencional apresentou umidade e pH inferiores aos da margarina light, e valores superiores para índice de acidez, índice de acidez em ácido oleico, índice de iodo e insolúveis orgânicos no éter. As margarinas ainda apresentaram índice de peróxido de 0,0090 meq/Kg, densidade a 25°C de 0,3092 g.cm-3 e a 40°C de 0,3030 g.cm-3 (para a convencional) e índice de peróxido de 0,0078 meq/Kg, densidade a 25°C de 0,3182 g.cm-3 e a 40°C de 0,3125 g.cm-3 (para a light). A margarina convencional alcançou maior índice de aceitação que a light, assim como maior intenção de compra. Concluiu-se que as margarinas elaboradas enquadraram-se nos padrões estabelecidos pela legislação brasileira e obtiveram índice de aceitação favorável. A elaboração de novos produtos à base do óleo de pequi ajuda a controlar o excedente de produção do fruto no pico da safra.
