RENDIMENTO DE CARCAÇA E DE CORTES COMERCIAIS DE QUEIXADAS CRIADOS EM CATIVEIRO

Abstract

O objetivo deste trabalho foi avaliar o rendimento de carcaça e o rendimento de cortes comerciais de queixadas (Tayassu pecari) criados em cativeiro. Quatro queixadas (três machos e uma fêmea), com peso vivo médio de 29,47 ± 3,45 kg foram abatidos, sem jejum prévio, e avaliados em relação aos rendimentos de carcaça quente e de cortes comerciais. Os cortes comerciais foram realizados de acordo com o preconizado para ovinos, após o resfriamento das carcaças em câmaras frias a ± 2ºC por 24 horas. Em relação ao peso vivo, o rendimento de carcaça quente foi de 53,80%, enquanto a cabeça representou 7,13%, a pele 12,55% e os pés 1,59%. A quebra de peso das carcaças após refrigeração foi de 3,22%. Os rendimento dos cortes comerciais em relação à carcaça, em ordem decrescente, foram: pernil (29,15%), paleta (20,85%), costelas (12,31%), carré (11,97%), pescoço (10,20%), lombo (7,78%) e barrigada/fralda (7,56%). Os rendimentos de carcaça quente, pele e dos cortes comerciais avaliados assemelharam-se aos observados em animais convencionais de açougue e alguns animais silvestres, como a capivara, o que demonstra o potencial da criação de queixadas para a produção de carne e couro.
