Abstract

Avaliou-se a estabilidade do ácido ascórbico em suco congelado de acerola (Malpighia glabra L. - sinônimo M. punicifolia L.), obtido de frutas verdes e maduras, em diferentes tempos de armazenamento. As análises químicas para determinação do ácido ascórbico foram realizadas imediatamente após a extração do suco da fruta e depois de um, três, seis e nove meses de armazenamento em congelador. Concluiu-se que o ácido ascórbico apresenta boa estabilidade em suco de acerola, com retenção de 83,72% para o suco obtido de frutas maduras e 91,22% para o de frutas verdes, ao final de nove meses de armazenamento a -18°C.
