Padrão do escurecimento da polpa de novos cultivares de maçã para utilização em alimentos minimamente processados

Abstract

Este trabalho tem como objetivo avaliar o escurecimento e a mudança total de cor da polpa de diferentes cultivares de maçã através de parâmetros colorimétricos, a fim de identificar aqueles com mínima ocorrência destes fenômenos e potencial para o processamento mínimo. Maçãs dos cultivares Daiane, Elenise, Fuji Mishima, Kinkas, Luiza, Monalisa, Maxi Gala e Venice, provenientes de pomares experimentais de São Joaquim, SC, safra 2018/2019, foram avaliadas em relação à atributos de cor relacionados ao escurecimento da polpa. As maçãs foram cortadas ao meio e dispostas em condição de ambiente. Após o corte, foram realizadas leituras de atributos de cor na polpa dos frutos, utilizando um colorímetro CR 400 (Konica Minolta®), em 14 intervalos de tempo, de 10 a 2.880 minutos. Através dos parâmetros coletados pelo colorímetro (L*, a* e b*), foram avaliados a luminosidade da polpa, o índice de escurecimento e a mudança total de cor. As maçãs ‘Fuji Mishima’, ‘Elenise’ e especialmente ‘Venice’ apresentaram menor escurecimento da polpa em comparação aos demais cultivares avaliados. Esses resultados indicam que possivelmente esses cultivares têm maior potencial para a utilização na indústria de processamento mínimo devido ao menor escurecimento e mudança de cor na polpa dos frutos.
