Abstract

?Como deberia medirse la calidad percibida por los consumidores para productos agroalimentarios? El enfoque multiatributo propone la descomposicion de la calidad percibida en factores intrinsecos y extrinsecos. Los primeros hacen referencia a los atributos percibidos por los sentidos: color, olor, sabor, textura, forma, frescura, apariencia, etc.; los segundos son atributos de imagen: precio, lugar de origen, marca, envase, garantia, reputacion, etc. Ambos grupos de factores pueden influir de forma diferente en el comportamiento del consumidor respecto a su evaluacion y experiencia con productos agroalimentarios. El presente articulo propone un modelo teorico para medir la influencia de los atributos intrinsecos y extrinsecos sobre las principales variables del comportamiento del consumidor. Mas aun, plantea la inclusion del grado de experiencia o familiaridad y del grado de implicacion como variables moderadoras. Este modelo proporciona un nuevo marco de estudio valioso para que los empresarios de este sector en zonas rurales desarrollen estrategias competitivas de forma efectiva adaptadas a las diferentes preferencias de los consumidores.
