Modelo integral de comportamiento alimentario sostenible (MICAS)

Abstract

Este capítulo propone el MICAS como un modelo teórico-conceptual integral para comprender y promover conductas alimentarias sostenibles desde una perspectiva sistémica, ecológica y multidimensional. Ante la creciente crisis ambiental y los patrones de consumo insostenibles, el modelo busca integrar factores biológicos, psicológicos, sociales, culturales, económicos y políticos que influyen en las decisiones alimentarias. Se fundamenta en enfoques como el conductismo contextualizado, la teoría bioecológica de Bronfenbrenner, la teoría del valor-creencia-norma (VBN), el modelo de acción responsable y la perspectiva de capacidades de Sen y Nussbaum. El MICAS identifica cuatro niveles clave: los estímulos alimentarios (internos y externos), los mediadores cognitivo-afectivos (valores, creencias, normas, hábitos), el aprendizaje (formal, social, experiencial) y el comportamiento observable (el qué hacer y para qué hacerlo), cuyo resultado ideal es una alimentación saludable, equitativa, culturalmente aceptable y de bajo impacto ambiental. El modelo tiene aplicaciones prácticas en el diseño de intervenciones educativas con enfoque ecológico, la evaluación de políticas alimentarias, el desarrollo de aplicaciones en salud móvil con base conductual, y como marco para investigaciones interdisciplinarias. Con ello, el MICAS se posiciona como una herramienta útil para avanzar hacia sistemas alimentarios más sostenibles, contextualizados y justos en América Latina y otros entornos con alta vulnerabilidad ecológica y social.
