Conceptualización socioecológica de los sistemas alimentarios urbanos

Abstract

El incremento de la población y su concentración en centros urbanos están estrechamente vinculados con los recursos naturales y agropecuarios de los cuales dependen estas poblaciones. Por otro lado, las definiciones comúnmente utilizadas en el estudio de los sistemas alimentarios giran en torno al intercambio material de productos y servicios relacionados con los alimentos, así como al conjunto de actividades involucradas en su producción, distribución y consumo. Si bien este tipo de definiciones son efectivas para definir a los sistemas alimentarios en términos de sus intercambios materiales, no reflejan, en cambio, los intercambios políticos, culturales e identitarios al interior de dichos sistemas. El presente capítulo es una propuesta conceptual y empírica para caracterizar los entornos alimentarios a partir de dos conceptos utilizados en las prácticas de consumo de productos y servicios relacionados con los sistemas alimentarios: alteridad (‘alterity’) y empotramiento (‘embeddedness’).
