Optimasi Formulasi Pembuatan Beras Analog Berbahan Dasar Blended Tepung Jagung Dan Tepung Porang

Abstract

Beras buatan atau beras tiruan ialah beras yang diolah dari bahan baku yang memiliki kandungan karbohidrat yang tinggi selain padi, biasa disebut beras analog. Pemanafaatan pangan lokal sebagai sumber karbohidrat dapat menghasilkan beras analog, seperti tepung porang dan tpung jagung yang dapat dimanfaatkan sebagai beras analog karena memiliki kandungan karbohidrat yang tinggi. Penelitian ini dilakukan dengan tujuan untuk mengkaji formulasi optimum dalam pembuatan beras analog berbahan dasar blended tepung jagung dan tepung porang. Penelitian dilakukan dengan menggunakan Response Surface Methodology (RSM) dengan desain faktorial 3 level. Batas bawah dan atas untuk konsentrasi tepung jagung masing-masing adalah 60% dan 69%, serta 31% dan 40% untuk konsentrasi tepung porang. Hasil penelitian menunjukkan bahwa respon yang dipengaruhi secara signifikan oleh variabel bebas yang diterapkan antara lain : kadar air, abu, lemak, karbohidrat dan waktu pemasakan. Sedangkan kadar protein, serat kasar, amilosa, densitas kamba, dan daya serap air tidak berpengaruh nyata. Hasil optimasi menunjukkan bahwa konsentrasi tepung jagung dan tepung porang optimum berturut-turut 69% dan 31%, dengan tingkat keinginan sebesar 0,84%. Hasil verifikasi menunjukkan kandungan kimia antar lain: kadar air 5,49%; kadar abu 3,31%; kadar lemak 1,27%; kadar protein 10,67%; kadar karbohidrat 79,24%; kadar serat kasar 1,64% dan kadar amilosa 11,51%. Sedangkan untuk sifat fisik beras analog menghasilkan densitas kamba 0,54 gr/mL; daya serap air 68,9%, waktu pemasakan 10 menit dengan viskosita 111,17 cP.
