Diversifikasi glukomanan umbi porang (Amorphophallus muelerri) pada produk edible film dari kitosan

Abstract

Umbi porang merupakan salah satu jenis tanaman yang mengandung glukomanan yang cukup tinggi (15-16% basis kering). Glukomanan pada porang ini yang dapat menghasilkan film yang baik, biocompatibility yang baik, biodegradable serta memiliki kemampuan membentuk gel. Penelitian ini dilaksanakan untuk mengkaji konsentrasi kitosan cangkang rajungan dan glukomanan umbi porang yang baik dalam pembuatan edible film. Proses pembuatan edible film dibagi menjadi beberapa tahapan diantaranya: pembuatan tepung glukomanan, ekstraksi kitosan yang terdiri dari proses demineralisasi, deproteinasi, dan deasetilasi. Hasil dari ekstraksi kitosan dan tepung glukomanan kemudian dibuat menjadi edible film dengan konsentrasi yang berbeda-beda. Yang dimana menggunakan perbandingan konsentrasi antara glukomanan dan kitosan antara lain 1:1, 1:2, 1:3, 2:1, dan 3:1. Edible film yang dihasilkan memiliki warna kecoklatan dan ketahanan air yang baik. Formulasi edible film terbaik dari hasil uji Duncan adalah konsentrasi 1:2 dengan hasil uji rata-rata ketebalan 0,09 mm, ketahanan air 55,4%, biodegradasi 43,89%, kuat tarik 4,35 MPa dan daya hambat mikrobiologi 0,215 mm.
