Abstract

Objetivos: Elaborar y determinar la aceptabilidad de morcilla de sangre de pollo, quinua y verduras como apoyo nutricional en la anemia ferropénica. Material y métodos: La muestra fue de 20 personas. El tipo de muestra es irrestricta no probabilística. Diseño descriptivo analítico de corte transversal. Análisis físico –organoléptico y químico, aplicando métodos oficiales de análisis de la AOAC y el CODEX. Resultados: El producto “fiambre-4”, alcanzó la mayor preferencia en el sabor, siendo un producto de buena aceptación, con la calificación de “me gusta mucho” en el 60% de los casos, y en el 20% de “me gusta muchísimo”. El 80% de los encuestados, le gustó moderadamente el fiambre “fiambre-3”, cuyo contenido de quinua corresponde al 15%, mientras que el 40% de los encuestados le gusto ligeramente el producto “fiambre-2”, cuyo contenido de quinua es del 20%. Presenta ventajassensoriales y nutricionales, 100 g de fiambre de sangre de pollo y quinua (fiambre-4), aportan 16,24 g% de proteínas de alto valor biológico que cubren aproximadamente el 25% de los requerimiento diarios del adulto y 21,25 mg de hierro. Conclusiones: Los valores medios obtenidos en el aroma, color, textura y jugosidad no evidenciaron diferencias estadísticas significativas de acuerdo a la prueba de Anova (P<0,05). El producto elaborado cumple con los criterios físicos y, químicos de conformidad para el consumo humano.Palabras clave: Morcilla, sangre de pollo, quinua, fiambre, anemia ferropénica
