HONGOS EN ERVA MATE COMERCIALIZADO EN CUIABÁ-MT, BRASIL

Abstract

La hierba mate (Ilex paraguariensis) es un producto común en los países de América del Sur. El consumo en esta región se realiza en forma de infusión fría o caliente. El objetivo de este trabajo fue realizar la cuantificación de hongos filamentosos y levaduras de las hierbas mate comercializadas en Cuiabá, capital del estado de Mato Grosso, Brasil. Fueron investigadas 16 muestras de hierbas mate disponibles en el comercio, separadas en dos grupos: hierbas puras y hierbas compuestas. Alícuotas de 25g fueron colocadas en viales que contenían 225 ml de peptona al 1%. Posteriormente se transfirieron 100µl a placas de Petri que contenían agar Sabouraud con 0,4 mg/L de cloranfenicol. Las placas se incubaron a 25° C durante 7 días. El 93,75% de las muestras mostraron crecimiento de hongos filamentosos y/o levaduras en contajes de 2x102 hasta 1,1x103. Las colonias de hongos filamentosos fueron sugestivas de los géneros Aspergillus y Penicillium. Las muestras resultaron aptas para el consumo según los parámetros de la OMS, sin embargo, en la actual normativa brasileña no existen parámetros para definir las cargas de hongos filamentosos y levaduras aceptables en este tipo de preparados. La normativa sobre seguridad microbiológica de los alimentos vigente en Brasil, no contiene parámetros para definir la carga aceptable de hongos filamentosos y levaduras en diferentes tipos de infusiones, revelando una brecha de riesgos para la salud humana, ya que no es posible certificar si un producto es seguro para el consumidor.
